Sydney’s Ultimate Rooftop Destination

Keystone is set to inspire yet again with the opening of Sydney’s hottest new rooftop late night restaurant / bar – THE ROOK. The Group, who consistently do fun well, is on a roll with three new venues in three months and now dominate the city’s rooftop scene.

Transforming the top floor of 56 – 58 York Street, THE ROOK is about a casual approach to discerning drinking, in a gritty glam vibe created by a unique team of local and international hospitality pros. This strip of pavement is fast becoming the beating heart of the Sydney CBD.

“The idea was to create the most simple, yet perfectly executed food and liquor in an unexpected rooftop environment. The design is raw, paired back with a selection of old and new furniture that have been thrown together to create the ultimate rooftop hangout.” Paul Schulte, Group Director, Keystone said.

Head chef Freddy Silveira, (formerly Quay, Guillaume at Bennelong) has created the ultimate rooftop menu. While small, the menu boasts lobster fresh from the markets daily and served three ways, one being grilled with an orange, lime & chive dressing. There is also a list of signature burgers including the Wagyu burger served with pickled beetroot, aged cheddar and aioli.
A cracking list of aromatised wine, champagne, European aperitifs and a solid offering of local micro brews and famous international boutique beer and ciders has been created by Keystone’s Head Sommelier, Sarah Limacher.  Keystone Group Bar Manager Jason Williams and Black Pearl veteran Cristiano Beretta throw down an unthinkable cocktail program with a world class range of gins, house made sodas and tonics. Cocktails on the menu include the Charlie ChapStick – sloe gin, lime, apricot brandy, sloe gin dust, marmalade roll up.

They do this nestled high above the buildings, as the bar’s namesake bird does. THE ROOK can only be reached by elevator access from the QVB end of York Street. The space has been designed by Schulte with the assistance of general manager Danae Cappelletto, taking inspiration from the venues and energy of Berlin. Upon exiting the lift, guests are greeted by a warm industrial space with recycled wooden clad walls, bench seating, a stone brick bar and rich urban views across Sydney’s city scape of historic buildings. A gabled clear rooftop shelters guests from the elements and lets the sunset cast incredible light into the dining room. Vintage street inspired art murals by Jasy & Atome of oneleginc are a stunning addition to the 30 foot floor to ceiling walls.

Keystone has seconded the best names in the business to operate the rooftop destination. Monopole Opens its Doors

The opening of one of Sydney’s most anticipated bars arrived last week with The Bentley’s Monopole welcoming drinkers and diners . The team’s new 50-seat eatery and wine bar is situated in the middle of Potts Point’s café and restaurant hub, Macleay Street. Head chef Brent Savage’s menu brings a new dimension to bar dining with his unique modern style. The menu suits a casual bar snack as much as it does a light, shareable dinner, and showcases the unusual seasonal ingredients that Savage’s food has become renowned for.

Savage has created a selection of house cured meats including Rangers Valley cured beef brisket, cured venison sausage and spiced, cured Berkshire pork neck. Other small dishes and snacks include grilled baby sweet corn with tamarind yoghurt, and salt cod with green peas and mint vinaigrette. Larger dishes can be shared or serve as a main course for dinner such as the slow roasted suckling pig with charred baby cucumbers or the grilled lamb shoulder with nettles.

Hildebrandt’s wine list is set to be one of the most assured wine bar programs in the country, with an extensive offering of biodynamic, natural and rare wines, with a strong focus on iconic international regions. A large selection of wines will be served both by the glass and by the carafe.

Renowned Melbourne designer Pascale Gomes-McNabb (Melbourne’s Cutler and Co and Cumulus, Sydney’s The Bentley and most recently Claude’s) has created an intimate bar with her signature focus on atmospheric lighting, unusual, quality features and a focus on the bar which runs through the whole venue and allows extensive seating and interaction with the bar team. The front windows open onto Macleay Street to integrate diners and drinkers with the street’s atmosphere, light and sounds in summer.

The Bentley has had an incredibly successful 2011 & 2012, winning Wine List of the Year at the Sydney Morning Herald Good Food Guide Awards 2012 as well as a coveted two chef’s hats, a standard it has held since opening. In the Australian Gourmet Traveller Top 100, The Bentley stayed in the Top 20 best restaurants in Australia.

The Bentley was recently listed in The Australian’s Hot 50 Restaurants for 2012.

New Year’s Eve with French Frivolities at Ananas

Ananas Bar & Brasserie is celebrating its first New Year’s Eve by hosting a masquerade ball typified by chic French glamour and style. Located in The Rocks, one of the world’s premier destinations to bring in the New Year with the Harbour Bridge and Sydney Harbour fireworks extravaganza on its doorstep, Ananas is welcoming guests to dine, party – or both.

The exclusive masquerade ball in the Ananas bar will have special guest DJs, and is the perfect party option for all revellers, kicking off at 6pm with a 5am closing license. Diners in the brasserie will have free access to the party, while others can pre purchase tickets for $100 per head, which includes a cocktail on arrival and a glass of Champagne at midnight (French, of course).

The brasserie will welcome diners to enjoy the a la carte menu, and guests are welcome to join the masquerade ball after their meals in the Ananas bar. Reservations are recommended.

Guests in the Argyle precinct will have exclusive access to The Rocks harbour foreshore, which is restricted to general public, and Ananas will offer ‘pass outs’ for those guests of the ball or brasserie who wish to watch the fireworks by the harbour, before returning to the party. For those keen to soak up the French joie de vivre as the clock strikes 12, screens will also be set up inside Ananas to show the midnight fireworks.

Melbourne rockers coming to Sydney for ‘Earth Hour Unplugged

The gig, ‘Earth Hour Unplugged’, is to support the global WWF initiative, Earth Hour, where the world switches off its lights for an hour to show support for reducing our environmental impact. It’s set to be a ‘not-to-be-missed’ Marble Bar gig and a spotlight Sydney event for Earth Hour 2012.

Free to  the public, those lucky enough to secure their spot in the bar will be asked to make an Earth Hour pledge via the wall of the Marble Bar Facebook page on the night (e.g. “I pledge to take shorter showers!”), with The Hello Morning picking their favourites and making their own pledges on the night too.

Starting out as Melbourne’s best kept secret, The Hello Morning is a secret no more, having released their self-titled debut album to rave reviews in February this year. They continue to draw attention and garner critical acclaim for their unique, soulful rock sound with a pop twist and exceptional live performances. Selected to launch the Triple J Unearthed digital radio station, their loyal following is growing by the day.

With a sound, energy and presence that when performed acoustically is set to ignite Marble Bar and its original, 118-year old features, lead vocalist Steven Clifford is keyed up to play amongst the bar’s famous marble arches. Hilton Surfers Paradise Celebrates Grand Opening with VIP Event

The Gold Coast’s newest luxury hotel, the $700million Hilton Surfers Paradise rolled out the red carpet on Wednesday November 16 to celebrate their grand opening with over 250 VIP guests including star performer, Australian songstress Delta Goodrem.

Celebrity supporters including hotel ambassador and Channel Seven personality Liz Cantor, former Miss Universe Australia and Celebrity Apprentice star Jesinta Campbell, radio presenter Lizzie Lovette, Australia’s Next Top Model’s Charlotte Dawson and the boys from Bondi Rescue joined other VIPs as they celebrated around the hotel’s spectacular 1500sqm outdoor pool deck.
