Red Lantern’s Head Chef, Mark Jensen shared stories from his new book, The Urban Cook with interviewer and renowned actress Kate Fitzpatrick at Woollahra Council’s Writers & Readers series last night. Mark is an industry leader when it comes to ethical eating and audience members were treated to a fascinating talk about sustainable cooking and eating. A host of issues surrounding modern food production were discussed as well as Mark’s rise to fame on the Sydney food scene. Mark did not start working in a professional kitchen until the age of 27 and now heads up one of Sydney’s hottest restaurants. Given the difficulty of getting a table at Red Lantern, hearing a talk firsthand from this exciting Sydney chef was a real treat.
